Kedgeree originates from the Indian dish khichri. It is thought that the dish was brought back to the United Kingdom by returning Scottish regiments and British colonials. It became a typical British  breakfast dish in Victorian times, part of the then already fashionable Anglo-Indian cuisine. We prefer our kedgeree cooked with prawn s but it can be prepared with egg, vegetables, beans or fish.
It makes a perfect starter waking up the taste buds for bigger things to come.
