Meet the Chef

Our talented chef, Tonny, brings both passion and decades of culinary expertise to Schoolhouse Hotel and Restaurant in Wootton Bassett. Tonny crafts every dish from scratch using traditional techniques. His background spans over 30 years, with time spent working in kitchens throughout Europe, mastering British, French, Italian, and colonial-inspired cuisine.

"My hotel school training and previous experience includes butchery, fishmongerey, bakery, patisserie and some 30 years or so cooking. I prepare all our food in our own kitchen. During my training I spent time in a hospital diet kitchen and can prepare food for all diets given some notice to get specialist ingredients. Having worked around Europe I like to cook little known traditional French food, Italian, colonial inspired food as well as Dutch or British. And I will try anything new. We have a temperature controlled food vehicle with which I regularly drive to local producers to see what they have on offer. I have come home with wild trout, capons, squirrel, goat, muntjac, locally grown mushrooms, foraged mushrooms and purple carrots, just to name a few. I am very excited about more modern food products like sakura, micro herbs, pea shoots or wheat grass. Edible flowers feature regularly on my menus. Brilliant way to make lovely tasting food look fantastic."

"When I am not cooking I help Karen running the hotel. After which it is book keeping with a bottle of Amarone della Valpolicella. Wine is my favourite tipple and I like to keep a stock of rare and fine wines and mondaine beauties."

My second visit with my partner for a pre Valentine's meal.... Food was to a very high standard and absolutely delicious. Beautiful and unique setting. Very cosy old building with real character. Karen who served us was exceptional in customer service and super friendly. I cannot recommend the Old School House enough... A real gem within the vicinity of Swindon. First class!
